750 mL (3 cups) water
1 medium-size yellow onion, chopped (250 mL/1 cup)
1 medium-size stalk celery, chopped (125 mL/1 cup)
6 allspice berries
6 black peppercorns
1 bay leaf
30 mL (2 tbsp) lemon juice
15 mL (1 tbsp) white wine vinegar
2 mL (1/2 tsp) red pepper flakes
1 mL (1/4 tsp) salt
454 g (1 lb) large shrimp in their shells, rinsed (about 36)
375 mL (1 1/2 cups) bottled salsa (optional)
In a large saucepan, bring the water, onion, celery, allspice, peppercorns, bay leaf, lemon juice, vinegar, red pepper, and salt to a boil over moderate heat.
Lower the heat and simmer for 15 minutes. Add the shrimp, bring the liquid to a boil, then simmer, stirring, for 1 to 2 minutes or until the shrimp are opaque and just firm to the touch.
Remove from the heat and let the shrimp cool in the liquid. Shell and devein the shrimp. Arrange on a platter, and serve with the salsa on the side if desired.
Makes about 36 shrimp.
