1 9-inch (23 cm) unbaked pie shell
1-1/2 cups (375 mL) light cream or evaporated milk, undiluted
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1-1/2 to 2 cups (375 to 500 mL) filling ingredients
Preheat oven to 400°F (200°C). Partially bake pie shell on lowest rack in oven for 8 minutes. Remove from oven and reduce heat to 350°F (180°C). Lightly beat eggs, then add cream, salt, pepper and desired seasonings. Spread filling ingredients in partially baked shell. Pour in egg mixture. Bake in 350°F (180°C) oven for 35 to 40 minutes. Let stand 5 to 10 minutes before serving.
Filling Ingredient Ideas
Quiche Lorraine: 6 slices crisp bacon, crumbled, 1 cup (250 mL) shredded Swiss cheese, 1/4 cup (50 mL) minced green onion, 1/4 cup (50 mL) each green and red pepper strips, 1/4 tsp (1 mL) each ground nutmeg and dry mustard.
Shrimp Quiche: 1 cup (250 mL) cooked shrimp or crabmeat, 3/4 cup (175 mL) shredded cheese, 1/4 cup (50 mL) chopped onion, 1/4 cup (50 mL) chopped green pepper, 1 tsp (5 mL) dry tarragon.
Makes 6 to 8 servings.
