Mandarin Orange Beef with Tarragon

Ingredients

1/2 cup (125 mL) mandarin orange juice
1/4 cup (50 mL) liquid honey
1/4 cup (50 mL) soy sauce
2 tbsp (30 mL) Worcestershire sauce
2 tbsp (30 mL) chopped fresh tarragon or 1 tsp (5 mL) dried
2 tbsp (30 mL) grated orange zest
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
2 New York steaks
4 mandarin oranges, sliced

Directions

In a food processor, blend the orange juice, honey, soy sauce, Worcestershire sauce, tarragon, 1 tbsp (15 mL) of the orange zest, salt and pepper. Purée until marinade is creamy. Set aside 1/4 cup (50 mL) marinade for basting. Transfer remaining marinade to a shallow baking dish.

Trim fat from steaks; punch holes on both sides with a fork. Marinate steaks in baking dish for 60 minutes, covered and refrigerated, turning occasionally. Once steaks are ready, set grill to medium high. Grill steaks, basting with reserved marinade, for 4 to 6 minutes on each side, depending on your taste. Remove from grill and place on a platter.

One minute before serving, lightly grill orange slices. Garnish steaks with orange slices and more fresh tarragon, and serve immediately.
