Ingredients
500 g (1 lb) ground turkey
15 mL (1 tbsp) vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
10 mL (2 tsp) chili powder
5 mL (1 tsp) dried oregano
1 mL (1/4 tsp) cayenne pepper
1/2 each green and red pepper, chopped
175 mL (3/4 cup) turkey or chicken broth
1 can (540 mL/19 oz) white kidney beans, drained and rinsed
125 mL (1/2 cup) shredded mozzarella cheese
125 mL (1/2 cup) low fat sour cream
25 mL (2 tbsp) fresh parsley, chopped
Directions
Heat oil in large nonstick fry pan or saucepan. Add turkey, onion and garlic. Cook, stirring constantly, until turkey is no longer pink. Add dry seasonings and mix well. Add green and red pepper and broth. Bring to boil. Reduce heat and simmer for 10-15 minutes. Add salt and pepper to taste. Add beans, cheese, sour cream and parsley. Heat through, stirring to combine. Serve immediately.
