Ingredients

625 mL (2-1/2 cups) low-sodium beef broth
250 mL (1 cup) dried lentils, sorted and rinsed
170g (6 oz) smoked turkey sausage, sliced
1 large potato, peeled and cubed
1 large yellow onion, chopped
2 cloves garlic, minced
5 mL (1 tsp) dried basil leaves
2 mL (1/2 tsp) salt
1 mL (1/4 tsp) black pepper

Directions

  1. In a large saucepan, bring the beef broth to a boil over high heat. Stir in the lentils. Lower the heat and simmer, covered, for 20 minutes.
  2. Add the sausage, potato, onion, garlic, basil, salt, and pepper. Bring to a boil. Lower the heat and simmer, covered, for 20 minutes or until lentils and potato are tender.
