Ingredients

1    green zucchini
1     yellow zucchini
30 ml / 2 tbsp    olive oil
1 clove    garlic, sliced thinly
3    oil-packed sun-dried tomatoes, cut in thin strips
2 ml / 1/2 tsp    fresh rosemary, chopped finely
To taste    salt and freshly ground pepper

Directions

Using a paring knife, slice the zucchini into thin strips, then cut the strips into 1-cm / 1/2-inch pieces. Set aside. 

In a skillet, heat the oil over medium heat and lightly brown the garlic. Add the zucchini and tomatoes, and simmer 2 or 3 minutes, stirring gently. Remove from heat, add the rosemary, salt and pepper and toss gently.

Serve immediately.
