4 cups (1 L) thinly sliced zucchini (about 2 large)
2 cups (500 mL) thinly sliced cremini or white mushrooms
1/2 red onion, thinly sliced
1 tbsp (15 mL) olive oil
½ tsp (2 mL) dried oregano or basil
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper
1 cup (250 mL) grated cheddar cheese
1. In greased 8-cup (2-L) shallow baking dish, layer half of the zucchini, then all the mushrooms and onion. Top with layer of remaining zuc-chini. Drizzle with olive oil; sprinkle with oregano, salt and pepper. Top with cheese.
2. Cover tightly with lid or foil and bake in 400°F (200°C) oven for 30 minutes. Uncover and bake 10 minutes longer or until vegetables are tender and cheese is bubbly.
