Ingredients

250 mL (1 cup) uncooked wild rice
500 mL (2 cups) low-sodium chicken broth
15 mL (1 tbsp) olive or vegetable oil
1 large yellow onion, chopped
1 stalk celery, thinly sliced
1 medium-size tart apple, chopped
50 mL (¼ cup) minced parsley
50 mL (¼ cup) chopped pecans or walnuts, toasted
5 mL (1 tsp) dried marjoram leaves
1 mL (¼ tsp) each salt and pepper

Directions

  1. Place the wild rice in a wire strainer. Run cold water through rice, lifting the rice with fingers to clean thoroughly. In a medium-size saucepan, bring the chicken broth to a boil over high heat. Stir in the wild rice. Return to a boil. Lower the heat and simmer, covered, for 40 minutes or until most of the broth is absorbed.
  2. Drain off liquid. Meanwhile, in a large saucepan, heat the oil over moderate heat. Add the onion and celery and cook for 5 minutes or until the vegetables are tender. Stir in the apple, parsley, pecans, marjoram, salt and pepper. Cook for 2 minutes more, stirring frequently.
  3. Stir the cooked wild rice into the apple mixture. Cook for 2 to 3 minutes or until heated through.
