1 pkg (375 g) CATELLI Healthy Harvest Whole Wheat Macaroni
50 mL (1/4 cup) butter
50 mL (1/4 cup) flour
625 – 750 mL (2-1/2 – 3 cups) warm 1% milk
5 mL (1 tsp) Dijon or grainy mustard (optional)
250 g (1/2 lb) light cheddar cheese, shredded (about 500 mL/2 cups)
Cherry tomatoes, quartered (optional)
Cook macaroni according to package directions. Melt butter. Add flour; cook and stir 3-4 minutes. Gradually whisk in milk; cook, stirring constantly until just thickened.
Season to taste with salt. Remove from heat; stir in mustard and cheese until melted. Add macaroni and toss to coat. Serve topped with tomatoes, if desired.
Makes 4-6 servings.
