1 zucchini, diced
4 cups of bean sprouts
1 red pepper, cut into rings
12-15 mushrooms, sliced
2 tablespoons of soy sauce
1 tablespoon of honey
Salt and pepper
1 cup of firm tofu, cut into cubes
2 tablespoons of sesame oil
½ cup of cashew nuts (optional)
Brown tofu, pepper and zucchini in the sesame oil. Fry for a few minutes.
Add mushrooms and cook two more minutes.
Add bean sprouts, soy sauce and honey and cook several minutes until bean sprouts are tender.
