3 cloves garlic, peeled and halved
Four 1 cm (1/2 inch) thick slices Italian or French bread
75 mL (5 tbsp) olive oil
45 mL (3 tbsp) mayonnaise
45 mL (3 tbsp) lemon juice
6 anchovies, mashed, or 10 mL (2 tsp) anchovy paste
1 mL (1/4 tsp) salt
1 mL (1/4 tsp) black pepper
1 medium-size head romaine lettuce, torn into bite-size pieces
50 mL (1/4 cup) grated Parmesan cheese
Preheat the oven to 200°C (400°F). Using 2 cloves of the garlic, rub the slices of bread on both sides. Brush with 30 mL (2 tbsp) of the oil and cut into 1 cm (1/2 inch) pieces.
Spread on an ungreased baking sheet and bake, uncovered, tossing occasionally, until golden brown and crisp — about 10 minutes. Meanwhile, rub a large chilled bowl with remaining garlic. Add mayonnaise, lemon juice, anchovies, salt, pepper, and remaining 45 mL (3 tbsp) oil and whisk until creamy. Add lettuce, Parmesan, and croutons and toss until well coated. Divide evenly among 4 chilled plates.
