1.5 L (6 cups) turkey stock
125 mL (1/2 cup) celery, chopped
250 mL (1 cup) carrots, diced
500 mL (2 cups) potatoes, cubed
125 mL (1/2 cup onion, chopped
1 mL (1/4 tsp) poultry seasoning
250 mL (1 cup) skim milk powder
75 mL (1/3 cup) all-purpose flour
500 mL (2 cups) water
250 mL (1 cup) turkey, cooked, chopped
1 can (284 mL/10 fl. oz) peas, drained
1 can (284 mL/10 fl. oz) corn, drained (optional)

Directions

In large saucepan, combine turkey stock, celery, carrots, potatoes, onion and poultry seasoning. Simmer 15 minutes. In small bowl, mix skim milk powder with flour. Blend water into flour mixture. Gradually add mixture to cooked vegetables, stirring constantly until sauce is thickened, about 8 minutes. Add chopped turkey, drained peas and corn, if desired, to soup and cook 5 minutes or until heated through.

Makes 20 portions.
