450 g (1lb) tortiglioni
1 white onion, chopped
45 ml (3 tbsp) butter
20 g (3 tbsp) white flour
125 ml (1/2 cup) vegetable stock, heated
500 ml (2 1/2 cups) milk, heated
125 ml (1/2 cup) cream, heated
1 bay leaf
2 sprigs fresh thyme
200 g (2 cups) old Cheddar, grated
60 ml (1/4 cup) Parmesan, grated
60 g (1/2 cup) Mozzarella, grated
Salt and freshly ground pepper, to taste
10 ml (2 tsp) paprika
Fresh thyme, chopped, to taste
- Cook the pasta in a large pot of boiling, salted water until al dente.
- Meanwhile, in a large pot, soften the onion in the butter. Add the flour and cook, stirring, for one minute. Pour in the hot stock, milk and cream. Add the bay leaf and thyme sprigs and continue cooking, stirring with a wooden spoon, until thickened (about 5 minutes).
- Remove the bay leaf and thyme sprigs. Add the grated cheeses and stir until melted. Add the drained pasta, salt, pepper and paprika. Toss well to coat the pasta with sauce.
- Serve immediately on heated plates, sprinkled with fresh thyme.
