450 g / 1 lb skinless duck breasts, all visible fat removed
2 cloves garlic
45 ml / 3 tbsp olive oil
450 g / 1 lb tagliatelle
125 ml / 1/2 cup fresh basil, chopped
50 ml / 1/4 cup / 30 g parmesan cheese, grated
To taste salt and freshly ground pepper
With a large knife, chop the duck meat and garlic as finely.
In a small pan over high heat, sauté the duck and garlic in the oil until the meat is well browned. Season.
In a stock pot, cook the pasta al dente according to package directions. Reserve 30 ml / 2 tbsp of the cooking liquid.
Drain pasta and toss with the duck-garlic mixture and reserved cooking liquid.
Add basil and cheese and toss again.
