Swordfish with White Wine

60 ml / 4 tbsp flour
To taste salt and freshly ground pepper
4 steaks, 150 g / 5 oz each swordfish
30 ml / 2 tbsp olive oil
2 cloves garlic, peeled and crushed with the blade of knife
50 ml / 1/4 cup white wine
10 ml / 2 tsp lemon juice
30 ml / 2 tbsp fresh parsley, chopped
To taste lemon wedges
Flour the fish and season.
In a pan, heat the oil and cook the garlic just long enough to release its flavour. Remove the garlic.
In the same pan, fry the fish steaks over high heat for 1 1/2 minutes on each side.
Deglaze with the wine. Add lemon juice and half the parsley. Season and cook over low heat 1 to 2 minutes.
Sprinkle with remaining parsley and serve with lemon wedges.
