450 g / 1 lb elbow macaroni
1 can, 398 ml artichoke hearts, drained and quartered
125 ml / 1/2 cup / 70 g black olives, pitted and chopped
250 ml / 1 cup radicchio, sliced thinly
45 ml / 3 tbsp French shallots, chopped
45 ml / 3 tbsp red wine vinegar
45 ml / 3 tbsp freshly squeezed lemon juice
15 ml / 1 tbsp fresh oregano leaves, chopped
5 ml / 1 tsp sugar
125 ml / 1/2 cup olive oil
To taste salt and freshly ground pepper
In a large pot, cook the pasta al dente, following package directions. Drain, rinse and transfer to a large bowl.
Add the artichokes, olives and radicchio.
In a separate bowl, combine the remaining ingredients and pour over the pasta.
Season to taste and toss well.
