1 onion, sliced thinly
As required olive oil
1 green zucchini, halved lengthwise and cut in 1-cm / ½” slices
1 yellow zucchini, halved lengthwise and cut in 1-cm / ½” slices
250 ml / 1 cup dry white wine
500 ml / 2 cups fish stock
4 fillets striped bass, skin removed
4 Italian plum tomatoes, peeled, seeded and quartered
1 sprig each thyme, tarragon and oregano
To taste salt and freshly ground pepper
To taste chopped fresh herbs
In a large skillet, wilt the onion in the oil for 5 minutes.
Add the zucchini slices and cook 2 minutes.
Add the wine and fish stock and reduce by one-third.
Add the fish, tomatoes and herb sprigs. Reduce heat to the lowest setting, cover and simmer for 8 minutes.
Carefully transfer the fish and vegetables to a heated serving platter.
Reduce the sauce over high heat for a few minutes.
Remove the herb sprigs and adjust the seasoning.
Pour the sauce over the fish and garnish with fresh herbs.
