3 tablespoons dry sherry or rice wine
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon dark sesame oil
1 teaspoon light brown sugar
1/4 teaspoon black pepper
1 boneless pork tenderloin (about 450g), cut into 1/8-inch-thick slices
2 tablespoons vegetable oil
5 cups coarsely chopped bok choy
2 cloves garlic, minced
- In medium bowl, stir together 1 1/2 tablespoons of the sherry, soy sauce, cornstarch, sesame oil, sugar, and pepper. Add pork. Toss to coat. Marinate at room temperature for 15 minutes.
- In large nonstick skillet or wok over high heat, heat 1 tablespoon of the oil. Add bok choy. Stir-fry for 2 minutes. Cover. Cook until wilted, about 2 minutes. Transfer bok choy to plate. Pour out liquid left in skillet.
- Add remaining 1 tablespoon oil to skillet. Add garlic. Sauté for 15 seconds. Add pork mixture. Stir-fry until just cooked through, 3 to 4 minutes. Add bok choy and remaining sherry. Cook until heated through. Serve immediately.
