500 ml (2 cups) arugula, rinsed and spun dry
125 ml (1/2 cup) walnuts
2 cloves garlic
75 ml (1/3 cup) extra-virgin olive oil
60 ml (4 tbsp / 30 g) Romano cheese, grated
450 g (1 lb) spaghetti
Salt and freshly ground pepper, to taste
- Place arugula, walnuts and garlic in the food processor and process to make a paste.
- With the machine running, pour the oil slowly down the feed tube. Add the cheese and pulse until just combined. Season and set aside.
- In a stock pot, cook the pasta al dente according to package directions. Reserve 125 ml / 1/2 cup of the cooking liquid and drain pasta well.
- In a hot serving platter, toss the pasta with the pesto and the reserved cooking liquid.
- Serve immediately.
