1 pita bread
2 slices brie cheese, cubed
2 slices prosciutto, cut into bite size pieces
1/3 can (52 mL) tomato paste (remainder from Tuesday’s lunch)
1 tablespoon olive oil
½ teaspoon salt
You will need to use a toaster oven for this recipe.
- Spread tomato paste over pita bread and sprinkle with salt. Top with prosciutto slices and brie cheese. Drizzle with olive oil.
- Place in toaster oven and bake at 350 degrees Celsius for 7 to 10 minutes. Serve with a side of mixed greens salad tossed with olive oil and balsamic vinegar.
