Sedanini with Sausage and Radicchio

1 onion, chopped finely
30 ml (2 tbsp) extra-virgin olive oil
30 ml (2 tbsp) butter
210 g (7 oz) hot Italian sausage meat
1 radicchio, cut in strips
250 ml (1 cup) white wine
315 ml (1 1/4 cup) 35% cream
Salt and freshly ground pepper, to taste
350 g (3/4 lb) sedanini
125 g (4 1/2 oz) Friulano cheese in small cubes
45 ml (3 tbsp) fresh parsley, chopped
- Heat butter and olive oil in a frying pan, add the onion and cook over very low heat for a few minutes until it softens.
- Add the sausage meet and fry gently for 5 minutes. Add the radicchio and deglaze with the white wine. Cook for 5 minutes over high heat. Add the cream and cook another 3 minutes. Season with salt and pepper.
- In a large pot, cook the pasta in boiling, salted water until al dente. Drain and toss with the sauce.
- Transfer the pasta to a serving platter and sprinkle with Friulano and chopped parsley. Serve immediately.
Variation: For extra flavour, add 5 or 10 ml (1 or 2 tsp.) curry powder.
