Sautéed Squash and Parsnips with Onions

500 ml / 2 cups / 450 g winter squash, diced
3 parsnips, peeled, in 0.5 cm / 1/4” slices
1 onion, chopped finely
1 clove garlic, minced
60 ml / 4 tbsp butter
30 ml / 2 tbsp parsley, chopped
In a large pot of boiling, salted water, plunge the squash and the parsnips and cook until just al dente. Rinse under cold water and drain on a towel.
In a large non-stick skillet, wilt the onion and the garlic in the butter. Add the vegetables and sauté a few minutes to brown lightly.
Transfer to a heated serving dish and sprinkle with parsley.
