Rotini with Salsa Cruda

5 medium red tomatoes, peeled and seeded
1 red pepper, seeded, in thin strips
2 cloves, garlic, sliced thinly
3 sprigs, fresh mint, leaves only
Salt and freshly ground pepper, to taste
450 g (1 lb) rotini
45 ml (3 tbsp) extra-virgin olive oil
2 sprigs, fresh basil, leaves only, shredded
Parmesan cheese, shaved, to taste
- In a food processor, purée the tomatoes and pepper strips with the garlic, mint, salt and pepper.
- In a large pot, cook the pasta al dente, following package directions. Drain without rinsing and transfer to a large bowl.
- Add the purée, oil and basil to the pasta. Toss well and season to taste with salt and pepper.
- Garnish with cheese shavings.
- Serve immediately.
