Rigatoni with Grilled Vegetables

2 green zucchini, sliced
1 yellow zucchini, sliced
1 medium red onion, sliced
1 red pepper, in thin strips
2 tomatoes, sliced
3 cloves, garlic, minced
75 ml (1/3 cup) olive oil
Salt, pepper and Italian seasoning, to taste
450 g (1 lb) rigatoni
50 ml (1/4 cup) pesto
1 piece, 250 g mozzarella di Bufala cheese, diced
- Preheat the broiler.
- In a large bowl, combine the vegetables, garlic, oil and seasonings.
- Arrange on a foil-lined baking sheet and broil, turning once with tongs, until done.
- While the vegetables are in the oven, cook the pasta al dente in a large pot, following package directions. Drain without rinsing and transfer to a large, heated bowl.
- Add the vegetables, pesto, cheese and pasta. Toss well to combine.
- Serve immediately.
