340g rigatoni pasta
2 small bunches broccoli rabe, tough stems removed, leaves cut crosswise into 1-inch wide pieces
1 tablespoon olive oil
1 red onion, halved and thinly sliced crosswise
1 yellow bell pepper, seeded and cut lengthwise into thin strips
2 scallions, thinly sliced on diagonal
1/2 cup golden raisins
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
8 cloves roasted garlic
12 cherry tomatoes, each halved
Pinch ground nutmeg
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
- In large pot of lightly salted boiling water, cook rigatoni until tender, following package directions. Add broccoli rabe to pasta pot for last 5 minutes of cooking time. Drain pasta and broccoli rabe.
- Meanwhile, in large nonstick skillet, heat oil over medium high heat. Add red onion, bell pepper, scallions, raisins, pepper flakes, and salt. Sauté until vegetables are crisp-tender, about 4 minutes. Add roasted garlic. Sauté 1 minute. Remove from heat.
- Return pasta and broccoli rabe to pot. Add bell pepper mixture, tomatoes, and nutmeg. Sprinkle with black pepper and cheese, and serve.
