3 cloves garlic, peeled
340 g (12 oz) adiatore pasta
500 mL (2 cups) packed fresh basil leaves
90 mL (6 tbsp) chicken or vegetable broth
15 mL (1 tbsp) olive oil
15 mL (1 tbsp) reduced-fat cream cheese (Neufchâtel)
2 mL (1/2 tsp) salt
1 mL (1/4 tsp) pepper
125 mL (1/2 cup) grated Parmesan cheese
These ruffled pasta shapes are uniquely suited to creamy sauces such as this basil-garlic purée.
In a large pot of boiling water, cook the garlic for 2 minutes to blanch. With a slotted spoon, transfer the garlic to a food processor. Bring the water to a boil, add the pasta, and cook according to package directions until firm-tender. Drain and transfer to a large bowl.
Meanwhile, add the basil, broth, oil, cream cheese, salt, and pepper to the garlic, and process to a smooth purée. Add the Parmesan and process briefly just to combine. Add to the hot pasta, and toss well.
Makes 4 servings.
