450 g / 1 lb pizza dough
30 g / 1 oz Parmesan cheese, freshly grated
1 onion, sliced thinly
60 ml / 4 tbsp olive oil
180 ml / 3/4 cup tomato sauce
90 g / 3 oz spicy pancetta, sliced thinly
60 g / 2 oz stuffed green olives, halved
180 g / 6 oz Mozzarella cheese, grated
Knead the dough for 2 minutes, incorporating the Parmesan cheese in the process.
Sweat the onions in the oil and set aside.
Preheat the oven to 220°C / 425°F.
Stretch out the dough to make a 30 cm / 12” circle and press into a pizza pan.
Top with the tomato sauce, onions, pancetta and olives.
Bake on the middle rack for 15 minutes.
Spread the mozzarellissima over the pizza and continue baking until the cheese is melted and lightly browned, about 5 more minutes.
