10 thin slices pancetta
200 g / 7 oz pizza dough
As required corn meal
45 ml / 3 tbsp olive oil
As required freshly ground pepper
6 figs, sliced
500 ml / 2 cups / 250 g mozzarella cheese, grated
Preheat the oven to 230ºC / 450ºF.
In a large non-stick skillet, cook the pancetta until crisp. Set aside.
Stretch the dough into a 30 cm / 12” circle and place on a pizza pan that has been sprinkled with corn meal.
Brush the dough with oil, sprinkle with pepper and arrange three-quarters of the fig slices on top, leaving a 2.5 cm / 1” border.
Arrange the cheese and pancetta on top of the figs and place the remaining figs in a rosette in the centre.
Bake 15 minutes or until the cheese is melted and beginning to brown, and the pizza is golden and crisp.
Cut into wedges and serve.
