450 g (1 lb) pennette
250 ml (1 cup / 200 g) carrots, julienned
125 ml (1/2 cup / 80 g) raisins
1 bunch arugula
60 ml (4 tbsp) fresh basil, shredded
30 ml (2 tbsp) white wine vinegar
75 ml (1/3 cup) olive oil
75 ml (1/3 cup) mayonnaise
Salt and freshly ground pepper, to taste
- In a large pot, cook the pasta al dente, following package directions. Drain, rinse and transfer to a large bowl.
- Add the carrots, raisins and arugula.
- In another bowl, combine the basil, vinegar, oil and mayonnaise.
- Pour the dressing over the pasta, season to taste and toss well.
- Serve chilled.
