Ingredients

450 g (1 lb) pennette
250 ml (1 cup / 200 g) carrots, julienned
125 ml (1/2 cup / 80 g) raisins
1 bunch arugula
60 ml (4 tbsp) fresh basil, shredded
30 ml (2 tbsp) white wine vinegar
75 ml (1/3 cup) olive oil
75 ml (1/3 cup) mayonnaise
Salt and freshly ground pepper, to taste

Directions

  1. In a large pot, cook the pasta al dente, following package directions. Drain, rinse and transfer to a large bowl.
  2. Add the carrots, raisins and arugula.
  3. In another bowl, combine the basil, vinegar, oil and mayonnaise.
  4. Pour the dressing over the pasta, season to taste and toss well.
  5. Serve chilled.
