1 small onion, finely chopped
3 garlic cloves slightly mashed
60 ml olive oil 1/4 cup
45 ml pancetta, diced 3 tbsp.
1 celery stalk, diced
1 carrot, sliced
796 ml Italian plum tomatoes, canned, coarsely chopped 28-oz.
5 ml chili flakes 1 tsp.
To taste salt
540 ml borlotti beans, canned 1 19-oz. can
500 ml water 2 cups
125 ml small pasta 1/2 cup
To taste Parmesan cheese shavings
15 ml oregano, dried or leaves of one fresh sprig,for garnish 1 tbsp.
Bring onion and garlic in a saucepan.
Add pancetta, celery and carrot. Cook over low heat for 5 minutes.
Add tomatoes. Simmer 5 to 10 minutes. Add chili flakes and salt. Add beans with their liquid. Add water. Cook 15 minutes.
In a small pot, cook pasta in salted water. Drain when half-cooked. Add pasta to sauce. Continue cooking until pasta is done.
Serve immediately, garnished with Bella Lodi cheese shavings and chopped oregano.
