4 medium tomatoes
2 pieces, 50 g each bocconcini cheese, diced
125 ml / 1/2 cup / 90 g orzo
125 ml / 1/2 cup commercial Italian salad dressing
2 sprigs basil, shredded
To taste salt and freshly ground pepper
4 leaves Boston lettuce
In a large pot, cook the pasta al dente, following package directions. Drain, rinse and transfer to a bowl.
Add the cheese, basil and salad dressing. Cover the bowl with plastic wrap and refrigerate 30 minutes.
Cut a slice off the top of the tomatoes and scoop out the insides. Season with salt and pepper and stuff with the orzo mixture. Set the tomato tops back on the tomatoes like a cap.
Place a lettuce leaf on each salad plate, top with a tomato and serve.
