2 pounds (900 g) sweet potatoes, peeled and thickly sliced
6 cloves garlic, peeled and thinly sliced
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
4 tsp (20 mL) olive oil
3 tbsp (45 mL) maple syrup
2 tsp (10 mL) grated orange zest
- Preheat oven to 450°F (230°C). Place sweet potatoes and garlic in medium saucepan. Add 1/4 tsp (1 mL) of salt and enough water to just cover. Bring to a boil over medium heat and cook until tender, about 20 minutes.
- Drain and transfer sweet potatoes and garlic to medium bowl. Add remaining 3/4 tsp (3 mL) salt, pepper, and 2 tsp (10 mL) of oil. With potato masher, mash sweet potatoes and garlic until not quite smooth, with some texture remaining. Transfer to 11 x 7-inch (27.5 x 17.5 cm) baking dish.
- Combine remaining 2 tsp (10 mL) oil, maple syrup, and orange zest in small saucepan and bring to a boil over low heat. Drizzle mixture over potatoes. Bake 25 minutes or until top is lightly coloured. (This recipe can be baked ahead, covered, and refrigerated. Reheat, covered, in 250°F (120°C) oven.)
- Serve with roasted poultry and roasted cauliflower, with baked apples for dessert.
