1 onion, chopped finely
1 green pepper, seeded and diced
60 ml / 4 tbsp butter
1 tomato, diced
To taste salt and freshly ground pepper
45 ml / 3 tbsp water
To taste Italian seasoning mix
625 ml / 2 1/2 cups / 250 g Mozzarella, grated
Preheat oven to 150°C / 250°F.
In a skillet, wilt the onion and green pepper in half the butter. Add the tomato and cook 3 minutes. Remove from heat, season to taste and set aside.
In a large bowl, whisk together the eggs and water. Season to taste.
In a non-stick 25-cm / 6” skillet, heat a little butter and make an omelette with one quarter of the egg mixture. Using a spatula, slide the omelette onto a plate.
Spread one quarter of the vegetables over the omelette and sprinkle with some cheese.
Roll up and keep warm in the oven. Repeat with remaining ingredients.
At serving time, cut each omelette in half on the diagonal.
