Marinated Lamb Kebabs with Grilled Vegetables
Lamb is particularly wonderful when grilled on your BBQ or stove-top. Add such delectable flavoring as cilantro, lime, mint, and cumin, and you’ll love this delicious entrée.

Ingredients
1/2 cup fresh lime juice
1 tablespoon finely chopped fresh cilantro
1 tablespoon chopped fresh mint
2 teaspoons ground cumin
1 teaspoon seeded, deveined, and finely chopped jalapeño (wear gloves when handling)
1/2 teaspoon coarse salt
1/8 teaspoon freshly ground black pepper
1 pound boneless lamb sirloin, cut into 20 (about 2×1-inch) pieces
8 pieces zucchini (1 inch)
8 red onion wedges (1/2 inch)
16 cherry tomatoes
Directions
- Whisk together the lime juice, cilantro, mint, cumin, jalapeños, salt, and pepper in a medium bowl until blended. Transfer half of the mixture to another medium bowl.
- Place the meat in one bowl and the zucchini, onions, and tomatoes in the other bowl. Toss to coat and let stand at room temperature for about 10 minutes.
- Preheat a grill or broiler to medium. Thread the meat and vegetables onto 4 metal skewers, distributing evenly. Brush with any remaining marinade.
- Grill the kebabs for about 12 minutes (or broil for about 8 minutes), or until the meat reaches the desired doneness, turning often so that the meat and vegetables cook evenly. Arrange on a platter and serve.
