Macaroni with Cheese and Ground Beef

Ground beef and macaroni with cheese is a classic of good home cooking. This version calls for a healthy dose of olive oil and low-sodium/low-fat beef stock.

Ingredients

2 tbsp (10 mL) olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 medium red pepper, diced
1 lb lean ground beef
4 cups (1 L) low sodium/low-fat beef stock
3 cups (750 mL) elbow macaroni
2 medium tomatoes, chopped
1/2 tsp (2 mL) dried basil
1/2 tsp (2 mL) dried thyme
1/2 tsp (2 mL) dried sage
1/2 tsp (2 mL) black pepper
1/2 cup (125 mL) sour cream
1/2 cup (125 mL) grated Cheddar cheese
1/2 cup (125 mL) fresh parsley, chopped

Directions

Using a large deep sauté pan, heat the oil and sauté the onion, garlic and red pepper for about 2 minutes. Crumble in the ground beef and sauté about 10 minutes or until cooked thoroughly.

Heat the stock on the stove or in the microwave oven.

To the ground beef mixture, add the hot stock, macaroni, tomatoes, basil, thyme, sage and black pepper. Simmer about 10 minutes or until stock has reduced and macaroni is cooked.

Mix in the sour cream and cheese and cook over low heat for another 5 minutes, continuing to stir until creamy. Mix in parsley and serve.
