750 mL (3 cups) Catelli Ready Cut Macaroni
50 mL (1/4 cup) butter
50 mL (1/4 cup) flour
750 mL (3 cups) warm 1% milk
Pinch of salt
750 mL (3 cups) shredded light or regular old Cheddar cheese
Cherry tomatoes, quartered (optional)
Crushed red pepper flakes (optional)
Cook macaroni according to package directions.
Melt butter. Add flour; cook and stir 3-4 minutes. Gradually whisk in milk; cook, stirring constantly, until just thickened. Season to taste with salt. Remove from heat; stir in cheese until melted. Add macaroni and toss to coat.
Serve topped with tomato and red pepper flakes, if desired.
