1 medium onion, chopped
60 g (2 oz) pancetta, diced
30 ml (2 tbsp) olive oil
340 g (3/4 lb) frozen lima beans
125 ml (1/2 cup) chicken stock
Freshly ground pepper, to taste
250 ml (1 cup) escarole, cut in medium-sized pieces
- In a saucepan, sauté the onion and pancetta in olive oil. Cook 3 minutes over medium heat.
- Add the lima beans, chicken stock and pepper.
- Cover and simmer 7 to 10 minutes, until beans are cooked.
- Add the lettuce, toss and serve.
