Grilled Shrimp, Italian Style

15 ml (1 tbsp) salt
500 ml (2 cups) cold water
8 giant shrimp, peeled with tails on, deveined
50 ml (1/4 cup) olive oil
75 ml (1/3 cup) bread crumbs
1 clove garlic, minced
15 ml (1 tbsp) flat parsley, chopped finely
- In a bowl, dissolve the salt in the water. Add the shrimp and refrigerate 15 minutes.*
- Preheat the grill.
- Drain the shrimp, rinse and pat dry. Transfer to a bowl. Add the oil, bread crumbs, garlic and parsley and stir well to coat the shrimp. Set aside for 10 minutes.
- Arrange shrimp on skewers and drizzle with olive oil.
- Grill about 2 minutes on each side (or until done, depending on the size of the shrimp).
*Do not let the shrimp remain in the brine for more than 15 minutes.
