Grilled Shrimp, Italian Style

Ingredients

15 ml (1 tbsp) salt
500 ml (2 cups) cold water
8 giant shrimp, peeled with tails on, deveined
50 ml (1/4 cup) olive oil
75 ml (1/3 cup) bread crumbs
1 clove garlic, minced
15 ml (1 tbsp) flat parsley, chopped finely

Directions

  1. In a bowl, dissolve the salt in the water. Add the shrimp and refrigerate 15 minutes.*
  2. Preheat the grill.
  3. Drain the shrimp, rinse and pat dry. Transfer to a bowl. Add the oil, bread crumbs, garlic and parsley and stir well to coat the shrimp. Set aside for 10 minutes.
  4. Arrange shrimp on skewers and drizzle with olive oil.
  5. Grill about 2 minutes on each side (or until done, depending on the size of the shrimp).

*Do not let the shrimp remain in the brine for more than 15 minutes.
