Green Beans with Garlic and Roasted Peppers

Ingredients

450 g (1 lb) green beans, trimmed
60 ml (4 tbsp) extra-virgin olive oil
2 garlic cloves, smashed
Salt and freshly ground pepper , to taste
1 roasted red pepper, in strips
125 ml (½ cup) fresh parsley, chopped

 

Directions

  1. Blanch green beans in boiling, salted water and drain.

  2. Heat oil in a sauté pan, add garlic cloves to soften, then add the cooked green beans. Season with salt and pepper and cook for 2 minutes.

  3. Add roasted pepper strips.

  4. Stir in chopped parsley and serve.
