450 g / 1 lb gemelli
250 ml / 1 cup / 180 g mozzarella cheese, diced
250 ml / 1 cup / 180 g smoked chicken, diced
375 ml / 1 1/2 cups red grapes, halved
45 ml / 3 tbsp chives, snipped
30 ml / 2 tbsp flat parsley, chopped
50 ml / 1/4 cup freshly squeezed lemon juice
10 ml / 2 tsp honey
125 ml / 1/2 cup olive oil
To taste salt and freshly ground pepper
In a large pot, cook the pasta al dente, following package directions. Drain, rinse and transfer to a large bowl.
Add the cheese, chicken, grapes, chives and parsley.
In another bowl, combine the lemon juice, honey and oil.
Pour over the pasta, season to taste and toss to combine.
Refrigerate 30 minutes.
