450 g / 1 lb gemelli
45 ml / 3 tbsp olive oil
2 cloves garlic, chopped
To taste red pepper flakes
1 L / 4 cups mesclun (gourmet greens)
1 piece, 100 g Goat cheese, rind on, diced
To taste salt and freshly ground pepper
In a large pot, cook the pasta al dente, following package directions.
Meanwhile, in a skillet, soften the garlic and pepper flakes in the oil.
Drain the pasta without rinsing and transfer to a large heated bowl.
Add the remaining ingredients and toss to combine.
