Gemelli with Fava Beans

450 g (1 lb) gemelli
4 cloves garlic, chopped
30 ml (2 tbsp) olive oil
125 ml (1/2 cup / 60 g) Parmesan cheese, grated
175 ml (2/3 cup) ricotta cheese
60 ml (4 tbsp) olive oil
500 ml (2 cups) cooked fava beans*
Sea salt and freshly ground pepper, to taste
Fresh marjoram, to taste
Parmesan cheese, shaved, to taste
- In a large pot, cook the pasta al dente, following package directions. Drain without rinsing and set aside.
- In a saucepan, sauté the garlic in the oil for 1 minute.
- Add the pasta, cheeses, oil and fava beans. Heat, stirring, to melt the cheese. Season to taste with salt and pepper.
- Transfer to a heated serving bowl. Top with marjoram and cheese shavings.
- Serve immediately.
*You can buy fava beans canned or frozen. In season, you can use fresh ones. Shell them and blanch them for 6 minutes before adding to the recipe.
