500 ml / 2 cups flour
5 ml / 1 tsp salt
15 ml / 1 tbsp finely chopped parsley
45 ml / 3 tbsp ground cayenne pepper
450 g / 1 lb smelts, cleaned
As required sunflower oil for deep frying
To taste fleur de sel (or sea salt) and ground cayenne pepper
In a bowl, combine the first four ingredients. Coat the smelts with the mixture.
Heat the oil to 190°C / 375°F and fry the fish until golden.
Drain on paper towels and transfer to a heated serving platter.
Sprinkle with salt and a little cayenne pepper.
