8 leaves radicchio, blanched, drained and blotted dry
200 g (7 oz) feta cheese, in 8 equal sticks
15 ml (1 tbsp) flat parsley, chopped
5 ml (1 tsp) fresh oregano, chopped
45 ml (3 tbsp) balsamic vinegar
50 ml (¼ cup) olive oil
Salt and pepper, to taste
- Preheat the grill.
- Lay out the radicchio leaves on a work surface. Place 1 stick of cheese in the middle of each leaf and roll up. Arrange rolls on a platter.
- In a bowl, combine the parsley, oregano, vinegar, oil and seasonings.
- Pour mixture over the rolls and marinate 10 minutes.
- Grill the rolls 2 minutes on each side.
- Serve hot.
