2 tablespoons olive oil
2 medium onion, coarsely chopped
3 garlic cloves, sliced
1 large red bell pepper, cored, seeded, and cut into matchsticks
1 pound sweet potatoes, peeled and cut into 1/2-inch chunks
3/4 teaspoon salt
1/2 teaspoon dried thyme
1 1/2 cups frozen peas
1 cup frozen whole-kernel corn
1 1/2 pounds kinless, boneless cod fillets, cut into bite-size pieces
- In a large skillet or Dutch oven, over medium heat, heat oil. Add onions and garlic and sauté 5 minutes or until onion is golden.
- Add bell pepper and sweet potatoes and cook, covered, 5 minutes or until sweet potatoes begin to soften. Stir in 1 1/3 cups water, salt, and thyme. Bring to boil, reduce heat, and simmer, covered, 5 minutes or until sweet potatoes are tender. Stir in peas and corn.
- Place cod on top of vegetables, cover, and simmer 7 minutes or until fish is cooked through and flakes easily.
