Ingredients

4 turkey fillets* (about 1 lb/500g)
1 medium red pepper, cut in strips
1 medium green pepper, cut in strips
1/3 cup (75 mL) orange juice
2 tbsp (25 mL) lime juice
2 tbsp (25 mL) honey
1/2 tsp (2 mL) paprika
1/4 tsp (1 mL) salt
Pinch freshly ground black pepper
1 tbsp (15 mL) cornstarch
2 tbsp (25 mL) water

Directions

*If fillets are not available, cut 1-1/2 lb/625 g skinless, boneless turkey breast into 4 cutlets (1/3 inch/6 mm thick).

Place turkey in a large skillet. Arrange red and green pepper strips around turkey. In a small bowl, combine orange juice, honey, paprika, salt, and pepper; mix well and pour over turkey and peppers. Bring to a boil, reduce heat to low, cover and simmer 8 to 10 minutes or until turkey is no longer pink inside. Using a slotted spoon, remove turkey and peppers to a serving plate; keep warm. In a small bowl, combine cornstarch and water; blend until smooth. Stir into hot liquid in skillet. Cook, stirring constantly over medium heat, 5-7 minutes or until mixture thickens and is bubbly. Spoon over turkey and peppers.

Microwave Instructions : Place turkey in an 8 x 12 inch (2 L) microwave-safe dish. Arrange red and green peppers around turkey. In a small bowl, combine orange juice, honey, paprika, salt, and pepper; mix well and pour over turkey and peppers. Cover and microwave at HIGH for 8 to 12 minutes or until turkey is no longer pink inside, rearranging turkey and spooning sauce over it halfway through cooking. Using a slotted spoon, remove turkey and peppers to a serving plate; keep warm. In a small bowl, combine cornstarch and water; blend until smooth. Stir into hot liquid in dish. Microwave at HIGH for 1-1/2 to 3 minutes or until thickened, stirring once during cooking. Spoon over turkey and peppers.
