Ingredients

4    boneless, skinless chicken breasts, slightly flattened
As required    all-purpose flour
30 ml / 2 tbsp    olive oil
60 ml / 4 tbsp    butter
To taste    salt and freshly ground pepper

Topping
1     lemon, peeled and flesh diced
30 ml / 2 tbsp    capers
15 ml / 1 tbsp    chopped Italian parsley
250 ml / 1 cup    marinated red peppers, in strips
As required    olive oil

Directions

Flour the chicken breasts, shaking off the excess.

In a large skillet, heat the oil and butter over medium heat. Add the chicken breasts and cook 3 minutes on each side. Season with salt and pepper and keep warm on a serving platter.

Combine all the ingredients for the topping and spoon over the chicken.

Suggested side dish: Steamed potatoes
