2 lbs. lean hamburger (for vegetarian equivalent supplement tofu ground “meat”)
Large bottle or can of vegetable cocktail (40-46 oz.)
4 cans condensed tomato soup (avoid very creamy styles)
1 large Spanish onion
1 large can of red kidney beans
2 large red peppers
2 large green peppers
1 large package of mushrooms
Mexican chili powder
Salt & pepper
- In a large pot, brown meat and drain fat. Chop all vegetables into chunks, fry with meat until soft. Add 2-3 teaspoons chili powder, liberal salt and pepper. Add beans (do not drain liquid from can, use it). Fill pot to ¾ full with vegetable cocktail.
- Simmer for an hour, stirring occasionally, then add condensed soup to thicken (do not add water to soup!) Season further to taste with chili powder. Let simmer on very low for another hour, stirring occasionally.
- Serve hot with crusty bread and grated cheddar cheese on top.
