45 ml (3 tbsp) unsalted butter
2 fennel bulbs, quartered
50 ml (¼ cup) brown sugar
75 ml (⅓ cup) white wine
1 can, 284 ml (10 oz) vegetable broth
5 ml (1 tsp) fresh thyme leaves
15 ml (1 tbsp) fresh oregano, chopped
Salt and freshly ground pepper, to taste
4 sprigs thyme
- In a skillet, melt the butter over medium heat and brown the fennel quarters on each side. Add the brown sugar, wine, broth and herbs. Simmer, covered, for 8 minutes.
- Remove the fennel and keep Cucina Etc., RD.ca web exclusive warm. Reduce the sauce, uncovered, until it is slightly syrupy. Season with salt and pepper and pour over the fennel.
- Garnish with sprigs of thyme.
- Serve immediately.
