125 ml (1/2 cup/ 100 g) pancetta, diced
1L / 4 cups (450 g) broccofloer florets
30 ml (2 tbsp) unsalted butter
30 ml (2 tbsp) flat-leaf parsley, chopped
Salt and freshly ground pepper, to taste
- In a skillet, fry the pancetta over high heat until crispy and brown. Remove from heat and set aside.
- In a large pot of boiling salted water, cook the broccoflower for 5 minutes. Drain and reserve in a large bowl.
- Add the butter, pancetta, parsley, and seasoning and toss well.
- Serve hot.
